Blitz Puff Pastry

Working with the butter block and keeping it contained in the dough can be a bit tricky and turns off many home bakers.  But don’t be discouraged, the is a way to get a very tasty homemade puff pastry with a bit less (okay, a lot less) stress….Blitz Puff Pastry.  As the name suggests, this is a faster version of puff pastry.

When we were studying pies in pastry school, so many of us said, “This is not how my grandmother does it.”  Our Chef told us one of the problems of being a baker is always trying to compete with childhood memories.  So even after two years of pastry school, my favourite pie crust recipe comes from grandma, written on the back of a cigarette package!

Thanksgiving Classic: Pumpkin Pie

I can’t believe Thanksgiving is just over a week away (for my American friends, I am not way ahead of myself, we Canadians celebrate Thanksgiving the second Monday of October)!  Where has the fall gone?  While some people think about Turkey first, I am a baker, so the first thing I think about in regard to Thanksgiving is pumpkin pie!   Everyone needs a pumpkin pie recipe in their baking arsenal.  I have been using the recipe for years and getting raves, even a request for a birthday pumpkin pie instead of cake from one family member

Classic Cream Scones

I also love scone because they are so easy to make.  In about 10 minutes I can have a batch ready to go in the oven.  When we have overnight guests, I love to tempt them out of bed with these warm, mildly sweet treats.

What I didn’t expect was the beautiful berries.  I knew it would be the beginning of blueberry season, but I also learned about bakeapple, partridge and crow berries!
